Brussels Sprouts and Sausage Gratin

For as long as I can remember I have decorated for Christmas in October. *gasp* I know. I know. “But what about Thanksgiving?!” Before you throw your cornucopia at me, let me assure you that I adore Thanksgiving and look forward to it with an equal amount of excitement!  Ok, maybe not equal, but I do love it.

Thanksgiving for me is all about memories.  Honestly, it’s those memories that led to the name of my blog.  My dad’s mom {Nannie to her family} loved Thanksgiving more than any other holiday.  She found so much joy in having her family all piled in her home and filled to the brim with turkey and dressing. We would eat, the kids would play outside while the men all watched football, then we’d graze.  There was always a kids’ table growing up.  But I’ll never forget the year that she asked for an enormous table extender.  My cousins and I had moved from the card tables crammed in the living room to the “grown-ups table” in the dining room.  She wanted all of her little chicks to be gathered around her table to eat, talk, laugh, and simply be together.  Gah, just one more of those Thanksgivings, right?  She and my grandfather are gone now, one of her sons is gone, and the rest of us are scattered here and there with just the memories.  And man, those are the memories I cherish the most.

So here I am, trying to create those beautiful memories for my little family.  And out of that desire this blog was birthed.  So many things happen when families gather around a table.  Food may appear to be the one taking center stage, and often times it does.  Yet, there is something far greater at work when people come together.  Unity.  Love.  Laughter.  Life.  Memories.

Join me over the next couple of weeks as I share some of the recipes I’m testing out for our Thanksgiving dinner this year.  I love Brussels sprouts any way you cook them, but when they are smothered in cheese and paired with sausage it just can’t get much better!

INGREDIENTS:
1 bag shaved Brussels sprouts
1 lb ground sausage
2 eggs
1 cup Gruyere cheese
¾ cup unsweetened cashew milk
¼ cup heavy whipping cream
¼ tsp freshly grated nutmeg
1 tsp garlic powder
1 tsp onion powder
1.5 tsp thyme
¼ tsp crushed red pepper (optional)
Pink salt and pepper to taste
2 T avocado oil (or butter)

INSTRUCTIONS:
Preheat oven to 350
In a skillet on medium heat add sausage and cook thoroughly. Drain and place to the side.
In the same pan add the oil (or butter) and sauté your Brussels sprouts until tender.
Add the sausage back in to the pan with the sprouts.
In a bowl add the rest of the ingredients except the cheese and whisk together
Grease a baking dish and add the sprouts and sausage then pour the liquid mixture on top.
Top with cheese and bake until the liquid is absorbed and the cheese is slightly browned. (around 30 mins)
